Ingredient Quantities

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 2 cups broccoli florets
  • 4 slices bacon
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions

1. Your oven should be set to 400°F (200°C) to preheat.

2. Prepare a baking sheet with parchment paper and lay the bacon out on it. Put the baking sheet in the oven and set the timer for 15 minutes. When the timer goes off, if the bacon is not yet crisp, check it every minute until it is. Then remove from the oven, cool, and crumble.

3. Prepare the broccoli florets on a separate baking sheet. Drizzle with 1 tablespoon of olive oil, season with salt and pepper, and roast in the oven for 20 minutes or until tender and slightly charred.

4. In a sizable skillet, heat the other 1 tablespoon of olive oil on medium.

5. In a skillet, add the minced garlic and sauté it for nearly 1 minute until it is aromatic.

6. Incorporate the chickpeas that have been drained and rinsed into the skillet and sauté them for about 5 minutes, stirring them occasionally.

7. Combine thoroughly the roasted broccoli, bacon, lemon zest, and lemon juice. Stir them all together to create a cohesive mixture.

8. If desired, add red pepper flakes for heat, and then season with salt and pepper to taste.

9. Continue cooking everything for an additional 2-3 minutes until it’s all heated through.

10. Reallocate to a platter for serving; if you choose to do so, you may now garnish with grated Parmesan cheese before placing it on the table. Enjoy!
